Cathy, I have been using plain Greek yogurt in place of the mayo. It gives the salad a nice sour creamy taste and I add more protein and less fat. We live off this during the summer.

A friend of mine (ours) posted your website on Facebook and I decided to try the featured soup: Roasted Butternut Squash Soup. It is FABULOUS!! I did add all the optional spices, but did not add the half and half because it is super rich and creamy without it! I’m looking forward to trying out some more of your recipes! Thanks for sharing!
